Varaždinski klipići

I have fallen in love with Varaždinski klipići. I often find myself munching away at these delicious "Varaždin Rolls."


In the 18th century these rolls were first served. The preparation of Varaždinski klipići soon became a tradition and were served with morning coffee in the town square. Varaždinski klipići is now a part of the local gastronomy. Klipići is prepared in restaurants, bakeries and in many households. This traditional Croatian product is protected by law.

Each klipići is prepared slightly different so each batch has its own unqiue twist.

Only a few simple ingredients are needed to create Varaždinski klipići:

1 kg flour
6 dl milk
2.5 dl oil
8 dkg yeast
2.5 dkg salt
2.5 g cumin
2 dkg sugar
half an egg


On Friday (the 7th) my host mom and I made two different kinds of klipići, Obićno (plain) and with jam.


The dough is made by mixing the flour, milk, oil, yeast, salt and sugar. It is kneaded until the dough becomes "slip-proof." You leave it to rise for about an hour then break the dough into 25 buns. Again you let the dough rise before rolling it out.



You place a filler at the edge of the dough. Depending on the type of klipići you are making the filler changes. If there is no filler it is obično klipići. Common fillers are cheese, meats and jams. We used mixed berry jam.

Then sprinkle cumin atop the klipići.

Bake in the oven for 10 to 15 minutes at a temperature of 220° C.

We sprinkled icing sugar over the jam filled ones once they were out of the oven.
